Yanagi Ramen at 11430 Quaker Ave. Racked up 15 health code violations in its latest inspection, including raw sushi fish held above the safe temperature of 41 degrees.

Inspectors found soup sitting in large pots that weren't cooling fast enough, a setup that lets bacteria grow. Cut cabbage also failed to stay cold enough, and the sanitizing solution used in the kitchen wasn't strong enough to do its job. One manager was caught washing a spray bottle in the hand sink, a violation since those sinks exist only for handwashing to prevent cross-contamination.

The report also flagged a toxic item that wasn't properly labeled and utensils that were damaged and needed replacing. Ramen wasn't alone on the low performer list this week. Pizza and taco spots also turned up with violations, according to the same inspection roundup that included one top performer inside United Supermarket.

For regulars at the Quaker Avenue location, this is the kind of report that changes where you order lunch. Fifteen violations in one visit is a lot for any restaurant, and the sushi temperature issue in particular touches food safety basics that inspectors take seriously. The restaurant didn't close. It has real fixes to make, according to the report.
